Here I am again and as promised below is the recipe for my fluffy
~Blueberry rolls~ 😋
What you need for the dough:
🫐 130 ml lukewarm plantbased milk
🫐 5 gr dry yeast
🫐 30 gr melted coconut oil
🫐 3 tbsp maple syrup
🫐 2 tsp vanilla extract
🫐 250 gr dinkel/spelled flour
🫐 1 pinch salt
Dissolve the dry yeast in the lukewarm milk, stir with a whisk.
Add the melted coconut oil and maple syrup and stir. Then add all the other ingredients. Knead and shape a ball.
Let the dough ball rise covered for 1 hour.
Then shape the dough into a rectangle.
Spread 2 tbsp melted coconut oil on the dough, sprinkle over 30 gr erythritol sweetener or coconut blossom sugar and 30 gr frozen blueberries🫐.
Roll the dough and cut into 4 cm wide slices.
Bake in a greased baking pan in the preheated oven at 170 degrees (circulation heat) for about 20 minutes.
I made a mixture of melted coconut oil (3,5 tbsp) and icing sugar (3 tbsp). Enjoy😍
A little tip⬇️
If you don‘t want to eat them all right away; simply heat them in the microwave for about 20 seconds and they‘ll be fluffy again😉
